Stuffed Chicken

This is one of those recipes that I have tried over and over, and i have finally perfected. It is so delicious! you will need:


2 chicken breasts, butterflied open
1/4 cup red onion, chopped
1/2 cup button mushrooms, chopped
1/2 cup fresh spinach
6 slices of bacon
mozzarella cheese

Here is what you do:

First saute onions and mushrooms in olive oil until tender. Set aside.


lay 3 slices of bacon on a square of foil. make sure the foil is big enough to leave about 2 inches of foil on both ends.


butterfly chicken open and pound flat with meat hammer, until it is about 1/2 inch thick. lay on top of bacon.

 

lay a slice of cheese on the egde of the chicken breast.

  

Add 1/2 of the mushroom and onion mixture on top of the cheese.


 

then stack 4 or 5 leaves of spinach on top.


 

Flip the edges of the bacon over  on the spinach and start rolling it up. make sure you roll it tight so the filling doesn't fall out.

 

Then wrap the foil over the chicken, like a tootsie roll. Bend the edges of the foil over on the ends to prevent water from seeping in.

 

Place the foil-wrapped chicken into boiling water. Cook the chicken for about 15 minutes. (or until the chicken is mostly cooked through.)

 

unwrap the chicken and place in frying pan on medium high heat until bacon  is nice and crispy. Serve with gravy! (see recipe below)

 


For gravy:
1 can cream of chicken soup
2 tablespoons feta cheese
1/2 cup water
black pepper to taste

in a sauce pan, combine above ingredients, and simmer until heated through. Serve over stuffed chicken!
