A couple nights ago I was craving Strawberry pie! SO...I came home and made one. i think it turned out really well and Aaron liked it too! :) Here is what I did! Yum, yum!
5 cups strawberry's, washed and hulled
1/2 cup sugar
3 tablespoons corn starch
2 tablespoons melted butter
pie crust for the top and bottom- store bought or homemade (I prefer homemade, but store bought works just fine)
white sugar - for top of crust

Preheat the oven to 400 degrees. Roll out 1 half of your pie crust and put in a pie tin, crimping the edges for a beautiful presentation. Roll out the other half and cut into circles...set aside.
In a bowl, mix together the cut strawberries, corn starch, and sugar, and pour into the crust.
Arrange the circles of pie crust on top in a pretty pattern. Brush the top with the melted butter and sprinkle with sugar. Bake the pie for 25 minutes and then reduce the temperature to 350 degrees. Bake for another 30 minutes or until the top is golden brown. Let cool, and serve with Strawberry whipped cream (recipe below)
Strawberry Whipped Cream:
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
2 tablespoons powdered sugar
3 tablespoons strawberry preserves
Beat the whipping cream in a medium bowl until frothy. Add the vanilla and powdered sugar and continue to beat until soft peaks form. Add the jam, a little at a time, until it is well incorporated and whipped cream reaches desired consistency.
