to make taquitos you first have to decide what kind of meat you want to use. Tonight I decided to use roast....because I had one. :) Thanks to my wonderful mother in-law, I now know how to make a delicious roast. The secret is to cook it until it falls apart, if your fork does not shred the meat...keep cooking it, and of course the right seasonings. i seasoned both sides with salt, pepper, and worchestershire sauce. I also browned the sides in a cast iron skillet. I then took it off the heat and to rub with beef bouillon.
I add the browned roast to a SMALL crockpot with 2 cups of water. Cook on high for about 6 hours, or until it easily falls apart with a fork.
move to a pan and season with pepper, paprika, more beef bouillon, and a little hot sauce of your choice.
Add little scoop fulls of meat into half of an uncooked tortilla. The pre-cooked tortillas do not work if you are going to fry them. secure with toohpicks and deep fry until they are golden brown. Serve with rice and beans and any topping that you would like. I would suggest guacamole, sour cream, and cilantro. Enjoy! :)
